I like the soul modes changing for similar reasons, also how Jackentstein's battle box becomes a maze. That said there's still fun in just traditionally hard bullet pattern fights like Jevil or The Knight, I think keeping those as optional superbosses teasing shadow crystals for overcoming the challenge makes them work really well.
