Let them sweat at medium heat for a while, until they're at least transparent, better if they're slightly caramelized/have color, even better if they're fully caramelized. Pour chicken stock until you have what you consider enough soup, but try to keep it at like 4 times the volume of onions at most. Stew for as long as you can handle. At least an hour.If you really wanna get fancy before serving add some gruyère on top. Serve with buttered baguette. A good onion soup should still have a ton of onion in it and thus you use the bread to soup up the liquid and you're left with a lot of onion + a bit of liquid to eat.See it's such vague instructions because the core of it is onion (quantity = however much you want) + chicken stock (quantity = mmh i want soup).
