Healer:
All sorts of vampiric, convertation of landed dmg to healing pretty common.
Shields: instead of healing taken dmg prevent dmg in first place.
Reverse effect: transform incoming dmg into healing.

Tank:
In this game tank role is meme. You can use spear for debuffs with literally any weapon, or even not use at all. There no threat generation since aggro taker automatically set aggro to max.
In other games tank can use avoidance, regeneration, damage reduction, cc and kiting as option to reducing incoming dmg. Also need threat generation sources for having enemy attack you instead of other charas.

Genuinely not much. They don't really have much design space that allows for anything interesting when it comes to healing or tanking.
The closest thing I think they could come to is

There are no "pve" attunements, only pvp ones and general ones. The general ones apply in all circumstances, the pvp ones only in the 1v1 arena and gvg. I just don't bother with general ones honestly.

"Just don't let them charge" is retarded since they can choose to let it go any time and not every weapon has a gap closer as cancer and instant as they do.
And parrying it doesn't work half the time since basically always at least one beam goes through even if you're spamming at your hardest and that's enough to absolutely rape your qi or stagger you into a oneshot.
I'd guess twinblades can *maybe* dodge one or two beams though I wouldn't bet on it but basically no other weapon has dodging as even an option.

I've had a lot of success using soaring spin's massive iframe to dodge through the beams and reach them, it's fairly predictable when they'll use the instant ones, I think they can hold them for like 5 seconds only
I don't know if I've played vs any good ones yet, but mixing that in in between dodges and parries has been my strategy so far with decent success

soaring spin is incredibly strong currently and I try to always make sure I have vitality for it, definitely get used to it and put it on a comfy bind, for me it became just as important in arena as drunken poet is
the iframe lets you dodge a lot of annoying things, and on top of all the catches you can make, if you have calmwaters as your 4 piece set, as well as the heal on dodge boots attunement, it's quite easy to heal back up in a pinch using soaring
a lot of weapons can also full combo off of the first hit of soaring spin, like for example something as easy as soaring spin 1st hit > spear lmb 1x > tab swap into sword, many things work
