I believe the answer is generally we don't know for sure how it works. The best I can think of off the top of my head is Patton surviving at the end of IX because "his body is sturdy", and that warriors are generally regarded as being much more robust than mages or ninja types, but I can't think of them explaining if hp works as a marker of general stamina and well being, or a literal numerical pool of health that makes it so you're fine as long as it's not empty.
