3 HD is pretty faithful to older versions with some nice additions and minimal cuts. It's good, but if you've played 3 before the updates ultimately don't make a huge difference.
1+2 HD are more ambitious and add way more to the point of being very different games from the originals. 1 has some inherent issues that come with being a one-guy RPG that the remake exacerbates, while 2 is a very substantial game now, on par with something like DQ6. I'd still recommend playing an older version first just to appreciate the difference.
7 Reimagined is cut down a lot from older versions without adding much new of substance. Despite the name it's way less of a "reimagining" than 1+2. The battle system and job system updates are very welcome but the cuts are substantial and mostly arbitrary. If you hated 7 it's less of what you hate, I guess.
