An unfortunate common tend in 2010s open world games is making map size big for big's sake. FFXV, GTA V, numerous games bragged about size but there just wasn't much to do for most of it. If you're a modder, it can be okay but this isn't Bethesda. You can't just rely on players to mod fixes for vital game problems. Kolosten, APHO, and other open world maps at least have justification for being a testbed for other games. HI3 in general often serves as a testbed for other Hoyo games, down to events trying out gameplay styles. But for the others, there's no deeper reason besides big because big and it's just bloat without substance.

I've tried out Genshin recently and honestly the combat kinda sucks ass. Wuwa combat may be rotationslop but at least it feels satisfying to use, in Genshin all my characters feel slow and clunky and half the enemies in the game have elemental shields that no one in my party can quickly get rid of so combat becomes a slog trying to kill these obnoxiously durable enemies that stunlock you with every attack.

In general, people do want more to do in a game, and having a large, explorable map is a good way to do that. Minecraft takes this to the extreme and is very popular for it.
There is nothing to do in most open worlds. They're empty. Kamurocho is smaller yet more to do than most.

In terms of raw things to do, Minecraft has pretty much all other games beat.
