It is currently 4:30 AM and I have been playing for the past 8 or 9 hours nonstop. My eyes are blood shot and I am delirious. These kinds of days and nights have happened multiple times and I don't know what to do.

What's even worse is that I suck at chess. I get so angry when I lose, I slam my table and even slap myself (not joking). I feel so stupid, and it hurts my ego so much. I feel like my identity as a "smart person" is under attack. I smash the "play again" button win or lose, and I rarely learn or get any better. I seriously have no control.

"Just one more game" I tell myself. Yeah, right.

What the hell is going on? I can have an addictive personality in general, but NOTHING (ABSOLUTELY NOTHING) has this grip on my reality in the moment that chess does.

Fuck this game. Seriously, fuck it to hell.

You shouldn't, really. Maybe in bullet if you're high enough rated that you need to care about avoiding opening theory but if you have to ask you shouldn't. b3 is probably the only version that gets played at high level.

There are a lot of very solid opening systems where this works. Generally you will either use it to prepare d5/e5 yourself (e.g. 1. e4 c6 2. d4 d5 for the Caro-Kann or 1. e4 e6 2. d4 d5 for the French) or to attack white's center with your pieces very quickly with something like g6 Bg7 c5 Nc6.

Moving a pawn forward weakens squares behind/beside it. It's not inherently a good thing to advance pawns. But just recklessly pushing pawns forward will create weak squares for your opponent to plant pieces or cause the too-far-advanced pawn to become a long term weakness. At least in the opening, you mostly don't want to advance pawns unless you have another pawn next to it that can advance alongside it or defend it in an advanced position (as with anything in chess there are exceptions, but suffice to say you shouldn't just launch pawns forward just because you can)

I've noticed a lot of people play not to lose in OTB. You see a lot of 1.d4/QGD, Chudo-Kann, and etc.

I think it works to your advantage to play more aggressive openings because they're less common in rated tournaments.

In my Dutch games, I feel like my opponents look when more uncomfortable than online, where they'll blitz out the entire opening as if it's the easiest thing in their life.

I'm assuming a lot of people just don't take that much risk in their OTB games so people don't prep it so much

Is Caro-Kann really playing not to lose? White has a bunch of very sharp options against it and even the "boring" choices lead to imbalanced pawn structures where black has a ton of play on the queenside. It's not very tactical compared to other options at first but in my experience if white doesn't push hard for a win or some sort of kingside initiative then black will usually get a comfortable advantage, so games often get very aggressive and tactical.
