With Speed Highway we have a direct comparison because of Generations. Adventure gives you more freedom in where you choose to go with minor path differences and some shortcuts. Like those big buildings at the beginning of the stage. In Generations this is, at most, replicated with a quick Homing Attack reaction. And then we have the more platforming focused sections, which in Generations are turned into 2D. Generations and other boost games are also heavy on quickstepping/rail switchingAnd this is just level design, it's ignoring that the basic movement is fundamentally different, the Homing Attack/air dash are different, and of course the Boost and Spin Dash
