I think their idea for "classic plus" is more akin to an 'enhanced' classic experience than a "more of classic" experience ala OSRS. I only played a paladin tank in dungeons until about the mid 40s in tbc anni so I am not the most experienced but I really feel like they already threw paladin a lot of bones in Forever. Extra button, judgement no longer breaks seals. There is just no way they Blizz will let paladins fall behind.

Gathering professions are decent early surprisingly decent. Merching is basically a flat line in this game, there’s never really any wild price changes so as far as investing early is concerned, not really a thing in this game. Not in any dramatic way anyways.
