Pink simply doesn't have enough going on with her character to feel like a good shadow crystal boss. She also lacks importance also as the shop owner. Her shop dialogue isn't particularly insightful to the story and needed the Friend patch to have anything worth noticing. Pink's deal with Kris with the Soul and Body situation has its worth but it's not news to anyone paying attention to the game. Ultimately she has very little to add and she felt more like the Mikes optional content battle in Chapter 4 than a proper crystal boss.
