Dess is the knight because she created the Gerson dustner and the Gerson dustner acts as a mentor willing to see the best in people, which was Dess's relationship with Gerson. Susie's interactions with Gerson directly parallel Dess's interactions with him. Even though he's based on a real person, Dess's perception of and experience with Gerson molded the dustner, just like other darkners.

The issue with DessKnight is that while its believers identify things that seem to be important pieces of evidence towards the Knight's identity, like the antlers, the Knight taking out a baseball bat that turns into a sword, the baseballs and "Dess promised to take me somewhere like this", the Knight copying Kris poses, etc, and because many NonDessKnight theories feel comfortable handwaving away in ways that feel dumb and reductive, like "Papyrus wears antlers because medieval knights sometimes had antlers on their helmet" or "Asriel looks like his girlfriend because he loves her so so much and is trying to find her," all discussion of whether those pieces of correctly identified evidence actually point to Dess or if they could point to anyone else even better gets derisively responded to with "Occam's Razor, the mystery person Knight is the missing mystery person." People have found what they think is the piece that fits the gap and it is extremely hard to think outside the box and ask if there's an even better fit for the evidence. And because most NonDessKnight theories toss out that evidence, people have a false preconception that NoelleKnight does the same.

It reminds me of Super Smash Brothers DLC character theories while those were on-going. Very heated but mostly out of love for characters that occasionally turned into derision for other characters.The Knight's identity is clearly left ambiguous and has multiple valid possibilities. People get excited for characters they wanna see and can fill in the blanks themselves. A personal favorite of mine even if I think there's no way the story goes that way is Mettaton Knight. It's really cool to see people adjust and interpret evidence in such ways. Calling the 'horns' on the helmet antenna was super clever.
