Are there any notable examples of singleplayer RPGs that got multiplayer mods? I know of Morrowind, but has it been done elsewhere?

Morrowind MP, and by extension OpenMW, is an abomination that made Morrowind accessible specifically to zoomers.

That said, PokeMMO was awesome when it was popular: Pokemon Fire Red but online. There was also an online Pokemon Emerald that was unbelievable amounts of fun back in the day. Neverwinter Nights was awesome, too

I'd say PokeMMO in general will also always be worth playing due to the reasonable rebalance + being able to travel and play through Gen 1-5 with one huge box and dex. Being able to trade, sell, and fight with others is just a nice bonus.
