I swapped the Choi bros and ran the same stage (last jelly workshop level). Yuhee couldn't do as much damage and even Yuhyun came close to matching him. All character skills are maxed out so there are no differences

This team worked out pretty well to get 3 stars on EX 3. You can sub Ren with just about anyone although I'd recommend a water character just to take less damage. Ideally you could have Izumi instead of Kyrian but multiple healers and Mengs sigil EX should do the job in general
