I feel like the tipping point for Eevee was gen 7 when Let's Go Eevee came out.
Eevee was just a gimmick mon whose gimmick was having a lot of evolutions, so it was naturally popular because it cast such a wide net.
Once GF stopped making new eeveelutions and started shilling Eevee on its own, I think that was the point of no return.

This is an interesting idea for the missing types. Instead of creating nine new evolutions, we could add a second type to the existing Eevee evolutions, resulting in something like:
-Eevee's evolution: Normal/Flying
-Vaporeon: Water/Dragon
-Jolteon: Electric/Fighting
-Flareon: Fire/Ground
-Espeon: Psychic/Steel
-Umbreon: Dark/Poison
-Leafeon: Grass/Rock
-Glaceon: Ice/Ghost
-Sylveon: Fairy/Bug

Late Gen V pretty much was that point.
Before then Eevee and it's evolutionary relatives had the odd appearance to show off it's evolutions or the new ones that fit like it's introductory episode in the anime, Gary getting one to eventually show off Umbreon, Red getting one in the Manga to coincide with the one Eevee you get in-game that could also show off it's evolutions by morphing between them but eventually settled on Espeon like his GSC iteration.
Up until Gen V Eevee was something you got once per-game (if even that as Hoenn gave it a miss) and the anime would have the occasional Eevee show up like May's one that eventually evolved into Glaceon but then Gen V had both BW2 having Eevee become a wild encounter for the first time as well as that one Eeveelution trainer in the anime who swept the league of shitters that just so happened to be the Gen right before we got Sylveon and from there Eevee practically became a mainstay in all media.
Serena gets one in XY, Lana gets one in SM, Koharu gets one in Journeys as well as Gladion having an Umbreon with it being his first Mon despite Type Null being his first in the games and him never having one on his team. Even Serena's manga equivalent Y has one.
Then you get Let's Go Eevee, G-Max Eevee, Eevee's exclusive Z-Move and Eevee being a Poke Ball Mon in Smash Bros. from 2014 onwards.
Gen V really was the impetus for the crazy amounts of Eevee shilling we've had.

No it's Gen 7. It's built off of and coincides predominately with Sun and Moon, taking most of it's attack animations from those games to boot and the only Non-Kanto Mon it features are the Alolan forms and Meltan and Melmetal which were introduced in Go and were made compatible to coincide with LGPE.

Weren't they planning to do this but went back on it due to fans already getting close to their own planned designs with the fanart? At any rate Flying eevee most likely considering the Regis got Electric and Dragon recently.

These are segregating the Pokemon by region, dumbass. Not Generation.
Furthermore, officially, Meltan and Melmetal don't adhere to any particular region as Home classifies them separately from all other regions.
They're not introduced via Kanto nor Alola so the best place to fit them in your picture's categorization would be Galar, but pretty much everyone with functioning frontal lobe would glass them and LGPE by extension as Gen 7. Sword and Shield are the first Generation 8 games.
Anyone who isn't an idiot would agree.
