Why aren't there wild growing Apricorns in modern Hisui / Sinnoh?

There most likely are, it's just that (You) don't see them because they aren't relevant to your player character's modern day Pokemon journey as there isn't a craftsman like Kurt or a specialized device like the Cram-O-Matic in the region, which is why you've literally only seen them show up in Johto (where Kurt honors the old ways), Galar (where the Cram-O-Matic is present) and Hisui (where modern Poke Balls literally did not exist yet).

Yeah, that's one possible explanation.
For my part, I imagined some environmental factors affecting the population of Apricorn trees, like pollution or deforestation, which caused them to disappear. Or there are some specific requirements that need to be fulfilled in order for them to grow, like special soil or climate, which in turn limits them to a few regions.

Such devices should be much more common though. If each region has fossil restoration tech, then item crafting machines shouldn't be that difficult to make. It's just kind of odd why GF decided to make Apricorns reappear in Galar only.

Pretty much this: Pokeball are manufactured as a purchasable commodity to the point that Making Pokeballs from hand became a lost art. Apricorn trees still exist, but the fruit they bare is useless to a modern trainer unless there's a Craftman with Pokéball making knowledge. Plus, due to high demand, it would be more environmentally friendly to create artificial ones in a factory rather than chop every single tree like the fucking Oncler.

Went extinct after the extinction of Ursaluna that kept the Stantler population at bay who regularly ate the apricorns and in direct competition with Pachirisu. This is why in modern Sinnoh Pachirisu is rare and can only eat berries and bark.

Peat Blocks simply aren't accessible for the player's inventory because at the time of Scarlet and Violet's release, they wanted you to buy Legends: Arceus, trade your Ursaring over there, and evolve it in that game in order to have Ursaluna in SV.
This doesn't automatically equate total absence of Peat or Ursaluna's extinction in-lore, it's ludonarrative dissonance, like how you can't traverse to that blacked out portion of Paldea on the map even when your Raidon gains the ability to fly, making virtually any and all obstacles obsolete, because that portion of the map doesn't actually exist in the game's limitations, even though there's clearly something over there in terms of the wider Pokemon World by virtue of how they designed the map.

There is no official answer to that, they are arbitrarily set up as a resource for early pokeballs. According to that one ancient guidebook, regarding the pokeball's history, you could basically take any container in any shape (e.g. glasses case) and use it to store [spouler]shrunken[/spoiler] pokemon.

Apricorn produce a kind a gas that the catcher to trick the Pokémon into instinctively shrink and hide to the nearest spot (which is the fruit that emitted said gas). Early Pokeballs were made out of Apricorns, but recent advancement allows them to synthesizes the gas to put with containers.
