Is there any way that a game with a much slower leveling progression, where there's so much content that you don't reach the endgame (champion or whatever) until it's been over 100 hours in the Pokemon franchise could ever be good?

Actually pretty valid.

As long as the game is fun to play purely on its own. To the point were 'reaching endgame' isn't even that important. It can work.

I do wonder how you create "lateral" content in these games aside from capturing Pokemon. The first thing you run into is that you have more resources later in the game; almost no one plays Contests right as they become available, for example.
