What was your biggest huh moment in pokemon?
For me it was that pokemon dont evolve by aging. Some pokemon are stuck in their first evolution stage until old age.

A lot of type related stuff in general. Water resisting ice but ice not resisting water, electric not being super effective against steel, Gyarados being water/flying instead of water/dragon, and Mawile being steel (now steel/fairy) instead of dark and/or ground.

Makes sense, you can evolve your Staryou or Porygon to their final stages pretty much as soon as their born.
Then there are Pokemon like Ash's Pikachu, Bulbasaur and Rowlet as well as Dawn's Piplup who refuse to evolve, not like they'd remain young forever just because of that...

The vast majority of Magikarps never evolve during their life.
Same for Tentacools, Wingulls...etc

Evolution is done as a necessity, not as some mandatory progression in biology. Otherwise you wouldn't be able to cancel evolutions.
If a swarm of Rattata live in a peaceful area with no threats, they will never evolve because there's no need to. But if they actively need to defend themselves from a hostile environment, some may evolve into Raticate. Pokemon who cannot use evolution to defend themselves tend to be lower in numbers in the wild as a result (Pikachu, Clefairy, Eevee, etc).
This works backwards, too. Baby Pokemon are only produced in an area that the parents feel comfortable in a secure enough environment to produce them, hence why incense is required to acquire them through the Day Care.
