I think it's Evo can go in one of two ways.Either it will take inspiration from the bird of paradise, both the orchid and the actual bird, and turn into something with bright colors and flowers in its plumage,OrIt turns into a cassowary and spends every waking minute wanting to tear someone's throat out.

I don't expect the final evolution to look cool, because cool is illegal in modern starter designs (arguably pokemon designs in general), so I do expect it to look goofy and uncomfortably human, but I am more and more convinced it will adopt an "L" shaped body akin to pic related and copious fanart, since they want to make sure every starter has a unique silhouette and this is a bird look they havent done on a starter yet.

While the species could easily change (certain languages do specifically allude to it being a baby chicken instead), chickens aren't exactly known for their flying ability (they can fly of course but you know what I mean).
