the wasteland premise is pretty genius for a sandbox. You're walking around not really sure what you want to do, but that's no problem as you walk around you'll run into weeds to pick and grass to water so you're always making some progress. You notice the outlines of houses and that there's a pretty consistent algorithm for how houses in the area are 'supposed' to be constructed, so you make the resources you can at the moment and start to follow that, but there are still some creative decisions you'll be forced to make in the process as well as room to deviate from the intended way.
Just a way better experience for the average player than the genre standard of "here's an empty field, make your own fun" and if you just start making buildings here and there aimlessly you end up with a mess

You can. You just need to fence in an area, stick a door on it, and then three pieces of furniture

Any space enclosed by walls (one tile high is enough) with a door counts as a house, and you can move Pokemon into them (though obviously none will spawn there naturally). Fixing the ruined houses is the quickest way to accomplish this.

The maps are HUGE. It's possible to build houses for all 300 in one area, I'm pretty sure (assuming the game allows you to move 300 Pokemon to the same area).

Not sure if multiple floors can count as different houses, if that's the case it would be trivial to do even (in terms of feasibility, not effort).

You need to finish the questlines. Check the quest log to see which subquests you still need to do. Even if you've got everything lit up and stuff you need to finish all the quests.

Eh, the pathfinding isn't all that impressive, and Pokemon do clunkily get stuck at times (but it properly detects this and soon opts for an alternative path when it happens). What I find much more impressive is how the NPCs interact with each other and how natural they made that feel. Not just standing-in-place interactions upon encountering each other (though those are surprisingly complex too), but they proactively visit each other and even play tag and stuff, all without a single moment of 'wtf is that NPC trying to do'.

Gamefreak cannot make a multiplat pokemon clone without destroying their relationship with nintendo and potentially facing lawsuits for the systems Nintendo has under copyright. It was rushed only to the extent that Nintendo probably set a firm cutoff of when cross gen games were allowed to come out. Rhythm heaven is likely the last one allowed to be cross gen and I wouldn't at all be surprised if they turn around and go nevermind the switch 2 is selling well enough it's an exclusive now.

It should, yes. The events are all based on your system clock, not a server master clock, which is how people who wanted to get the Hoppip line settled before the 9th-10th were able to do so.
Seems like the plan is to update the game over the course of the year to add the rest of the calendar events, as well as the inevitable DLC to cover the rest of Kanto.

there will be cotton spores everywhere no matter what dream island you go to, you wont miss them, id recommend using magnet rise if you have it and just scanning over the island top down in the sky so you wont miss any though
once you get them all, you can basically use them as the money for hoppips store in the center, just look up the habitats to make sure your buying the right things for them though cus some of the items arent related to the habitats at all

Did you do Bleak Beach before Rocky Ridges? You need to finish a lot of quests from both before unlocking the last area which has its own questline. You finish the game by completing the Team Initiation Challenge which can't be fully completed until you do the other questlines.

Cooking food is early on in the Rocky Ridges questline, so you probably have quite a while to go.
