Eevee would probably be the easiest, but I bet Umbreon would be a close second. Its fur looks pretty thin, and really the main thing you'd have to worry about is the hunting instincts at night.

If they're smart, I'd say Sylveon and maybe Espeon, both can take care of themselves and possibly others with their ribbons/telekinesis.If they're dumb, then I'd say Leafeon just because you don't need to feed it.

Umbreon - mostly quiet, but don't agitate; nocturnal trainer strongly preferred5. Vaporeon - will get furniture and belongings wet, needs space6. Glaceon - better thrives in wintery environments, not for everyone7. Flareon - constant brushing, dislikes baths, might immolate property8. Jolteon - pointy and temperamental, say bye-bye to electronics
