There's fuck all of them and the electric theme is barely explored. If you looked at the electric types per gen the situation would look even more dire.

Fire has most of the good and iconic designs like Ninetales, Braixen, Rapidash, Houndoom, and Emboar.
Fighting is the coolest conceptually because it is all about martial prowess and physical combat, but the designs are a mixed bag because most of them are just humans.
Darkness is also cool because it is just like fighting but with a bigger focus on brutality, stealth and underhanded tactics than martial prowess. Cool dark types include Absol, Zoroark, Mightyena, Darkrai and Hydreigon. Most Dark types have a very stealthy color pallet that allows them to creep around in the darkness unseen well.
If I was a gym leader, I would pick fire, fighting or darkness depending on the available Pokémon I have access toin the region. But if I had to pick without knowing what Pokémon I will have available, I will probably pick fire.

Bug.
Teaches you about early evolution, teaches you that BST < tactics (it always gets interesting moves first compared to other types), not overpowered type matchups, the designs are mostly on point.
Bug is the original pokemon type and carries that title like a badge of honor.

If we are talking about art/character design, then bug.

Sure there are some worms and cocoons that are poor design outliers, but other than that there are so many good designs for bugs. They have some of the coolest deisgns, some of the cutest designs, almost every gen has a really creative design based on real life bug biology.

Probably Flying.
It has a very distinct identity for the most part, Gyarados is pretty much the only wtf tier Flying types.
It has notable offenses and defenses that both shape it. It has a lot of type specific interactions that make it by far the most active typing in the game.
It has good moves, but every move has a flaw that feels real. Drill Peck has bad distribution. Brave Bird has recoil. Air Slash has imperfect but manageable accuracy. Hurricane needs Rain.
If other types were more like Flying, pokemon would be better.

Grass. It's has clearly defined strengths and weaknesses, very clear niches in its gameplay, the flexibility to be run in many different situations and not only is it rather obvious when you are fighting a Grass type leading to good communication with the player + a strong identity as a type but in doing so was also used to bait the player in Gen 2 using Sudowoodo's funny mimicry gimmick.
