Probably because they wanted a familiar taste and berries throw a dishes flavor off.
Rawst berries are bitter while strawberries are known for their sweet taste.
Leppa berries are primarily spicy since it other flavors subtract from each other.
Nanab berries have an astringent taste and it's implied it can only be eaten whole.
Pinap berries aren't sweet at all.
Tamato berries are known for their spicy flavor while tomatos are more savory.
Wiki berries are astringent.

Yeah, replacing real fruit with berries doesn't really work because they're not meant to taste the same. The tamato berry is more akin to a hot pepper than a tomato.
Which is probably a sign they were never meant to be replacements in the first place. Tropius doesn't have nanab berries growing on its chin.

It's not THAT vague. You use them in the SWSH curries. So humans CAN eat them safely, which we also see a few times in the anime, typically as an ingredient in cakes or ice cream etc.
From the anime, it's more that just like, they're pretty crunchy even things you'd expect to be very soft given their normal counterpart like tamato, and the flavors are quite strong for the human palette, which is why it ends up used in small pieces or just juice thinned out by a lot of filler substance like bread or ice and milk, or used specifically for their intense flavor in curry, a notably strongly spiced dish.

It'd be like eating a yuzu or a habanero, but it has the size and texture of a raw russet potato. Nah, you cook that shit til it's soft and use like maybe one to strongly flavor an entire multi-serving dish.
