I feel compelled to get a Switch 2 before the inevitable price hike, but it seems Pokopia is the only exclusive that looks somewhat fun... I foresee at least another year of drought.
Will I enjoy it if I've never really played cozy games like Animal Crossing/Minecraft etc.? Does it have any challenge whatsoever?

I wouldn't say it's challenging, but you do have to actually engage with all the game's mechanics to complete the dex and raise each town's environment level, which still puts it firmly ahead of the braindead slop that GF has been churning out since XY.

For what it's worth I bought my switch 2 for pokopia and don't regret it
