Crash is ok. Just ok. Doesn't reach the highs of the others but it's solid.
Mario is a bit janky in some places but otherwise blows the others out of the water. Has the most interesting levels and most engaging controls.

2D Sonic: not that difficult to complete, but it has a ton of optional routes to explore and optimizing movement and playing with the physics is fun. 3D Mario feels more like 2D Sonic than it feels like 2D Mario in that sense. 3D World is what a proper 3D version of a 2D Mario game would be like. I haven't played many 3D Sonic games but none of them have felt like they had the rolling ball physics Sonic is famous for, and they also had these weird sections where he's running automatically and you use shoulder buttons to switch lanes that I thought felt more like a weird racing game than Sonic.

It depends what 3d sonic game you mean. SA1 doesnt have these lane sections and the levels are more open, and it absolutely does have rolling ball physics and you can mess a ton around with movement in that game too (though in a different way than in classic sonic).

Yeah, 3D sonic is a bit of a mess of a series. They kept changing the desing philosophy along the way. If you didn't like one game, another, with a totally different design,might be more to your liking. That's part of the fun of the franchise!
A tip for SA1: there's a beta version of the windy hill level, which some consider to be the best level in the game. There are mods that reimplement it. Also, here's a taste for what you can do in this game:

After the adventure games they threw out the physics platforming and more open ended stages. Both are on steam for cheap, if you decide to do the chao garden stuff just know SA1s version is basically a tech demo when compared to SA2s garden.

SA1 still has the same feeling. The casino for example just lets you kind of run around and collect rings however you want. Other stages have similar sections, but it's usually just a small part of the level in comparison.
It's not until SA2 that all of sonics stages start to look like speed highway in terms of design.

Sonic Adventure is the elephant in the room here. Mario 64 and Crash are all-time classics. Sonic Adventure is ok. He peaked in 16 bits on the Genesis if we’re console warring. Crash didn’t exist yet and the Sonic games are better than Super Mario World and Yoshi’s Island. I’d say DKC (especially 2) would be the best platformers on SNES, abd Crash is derived from them. The best 2d Mario platformer is SMB3. Not sure Sonic was ever better than that one.

It’s the glitchiest of the 3. It tries to cram the most gameplay styles into one game. Nobody needed Tail’s Panzer Dragoon Jr., Big’s fishing, bad kart racing, stupid Amy or even the Chao Garden. It could have taken a page from Mario and Crash and just tried to do one thing well. They wasted resources and didn’t make the actual Sonic levels or physics engine as good as it needed to be.

It tried to have a big story element, whereas Mario and Crash knew that a minimal story was timeless. The story segments make me cringe, and they did back in the day too. Why did they put Sonic in a human city with nightmare humans? Is this supposed to be where he lives?

This isn’t to say it’s terrible, I just don’t think it’s on the 10/10 level the other 2 are.

To the devs credit, the physics of Sonic are way harder than Mario’s to translate to 3d. They didn’t get it quite right, Sonic is hard to control and it doesn’t really have the pinball feel, and finding different paths is more like taking forks in the road than mastering the unique physics to go to new places like the 2d games. 3d Sonic is a tall order.

Crash just took the basic physics of Donkey Kong Country and made a polygonal 3d game out of it. It doesn’t seem innovative today but it sure was in 1996. It has great level design. Mario 64 has great open world sandbox level design. Sonic feels like you’re either speeding along going from setpiece to setpiece or very jankily trying to do precise platforming with a rocket powered top.

The levels are vast but they just feel cluttered with simple gimmicky contraptions that often repeat themselves. It starts to feel rather routine and dull after a while. The level design in SMB3 and SMW seemed a lot more clever.
