The soundtrack of Arcanum stands out incredibly for me. Most of it is composed and recorded as a string quartet, and the music is good enough for much of it to be on the level of 19th century classical string quartet music. It manages to musically stand on its own, all the while being mostly just the background music for the game. And it's also incredibly atmospheric and emotional. It transmits a deep sense of melancholy, of mystery, and at times of almost lovecraftian strangeness, all with a subtle quasi-victorian elegance to it.
It would be so cool to make a steampunk movie based on Arcanum. Or even just a remake of the game which feels technically limited, buggy and unpolished. Arcanum is to me one of the extremely rare instances of steampunk done right and not being cringey shit.

Quest for Glory 4 for me. Atmospheric music for days - the faded glory of "Hero's Guild Hall" when you first enter the dilapidated adventurers guild, the subtle danger when you meet "Rusalka" and the very unsubtle danger of "The Castle." Even walking around Mordavia at night has suspenseful music

I shall post some songs I like from various games. Some are well known, others not so much. What I distinctly remember doing is one year I got a decent hi-fi as a christmas present and it allowed you piping the audio from a console (well in my case a psx and then ps2) through it so occasionally when I rigged that up I could get some real nice audio rather than the rattling 1W TV speakers. This certainly opened my eyes (well, ears I guess) to good sound output which now i;m older and have dosh I have invested in a decent set of headphones, amp and dac to pipe my consoles and pc through. Certainly makes the psx boot tune hit hard.

My cousin's Gateway 2000 came with Altec Lansing speakers. They were great for those early DOS sounds I liked. My original Soundblaster 2.0 came with all sorts of programs, but the Tetra Music Composer was mesmerizing with the cool song, which had a much better framerate for the waveform than this video demonstrates but I cannot find better until I finish my capture setup: https://youtu.be/e8jaTnFkBVw
