For adventure-racers it's either DKR or Crash, but for strict Go-Kart racing, nothing beats the Mario/Luigi/Royal circuits on Mario Kart 64. It also has the best multiplayer mode (Battle).But with this kind of games it's more up to personal memories and attachment, the one you played as a kid is the "best of all time" (4u)

Speaking of Speed Freaks, they're actually porting over the courses to CTR now. Only a few but I hope they do all the courses. I'd love to see Gran Turismo 1-2 tracks some day, as I'd love to see how a "serious" track plays in that engine.
