Is even possible to demake modern AAA design for a retro console?

I mean, most AAA games boils down basically to JRPG modes mixed with FPS or hack and slash or beatem up combat.

Which would be something like mixing River city ransom with FF 1.

Every so often I used to see posts on r/lowendgaming asking for open world game recommendations. That makes me wonder what the bare minimum specs you'd need to handle a modern open world game are.
I assume you mean "retro retro", but I wonder how much you'd have to pare down GTA V to get that running on a PS2, assuming you have access to a hard drive because even the 360 needed one for that game.

Porting down Assassins creed to 16 bit would take too much away but I think most modern games like Doom Eternal, Mario Kart World, Balders Gate 3 could be reduced to ps2 or voodoo 1 graphics and it wouldn't affect the enjoyment that much.
