I recently replayed both Leaf Green and Yellow and had a decent time with both.
FRLG is a lot more convinient and better playing game, but Gen 1 jank can be enjoyed for what it is, even if you're not particularly nostalgic for it and I recommend experiencing it (and Yellow additional content) at least once.

Originals. Aesthetics, music, raw creative vision with none of the bloated baggage that comes with being part of a larger franchise.

The remakes have more "balance" changes like special attack and defense split, having more ghost type moves, inclusion of dark type moves, a steel type Pokémon (magnemite), can hold items, Pokémon natures, Pokémon passive abilities, some changes in level up skills (for example Charmander gets metal claw early for Brock), among other changes.

Original has the fun and busted combination of the special attack and defense stat being one, and psychics being ridiculous along with having some fairly strong normal type Pokémon. There's also dig not getting nerfed.

It's probably better to go with the remake because fighting types and rock types don't suck utter shit there due to the expanded move pool. Either way both games are breezy.

They're more polished in terms of gameplay but the originals got a peculiar vibe, less kiddy if you want. If you're unsure you could as well start with these ones, they're great for what they are.

Also, you probably haven't even played the Japanese RG, to really talk about aesthetics and if it all comes down to be just on Gameboy for you, Crystal is infinitely better game.

Gen 1 DOES have its jank and rough edges, but it's still a well put together and designed game overall. It got big because it's an entrylevel JRPG that's simply really good.

I'm gonna back up my statement too, because I didn't even get drawn in by the marketing or anything, the game hadn't officially reached my country yet. Rather, my brother had heard about it online and downloaded an American ROM for the emulator we were using, and holy fuck, the game hooked us right away.
Gen 1 had phenomenal marketing, but it only worked as well as it did because the product was actually so good.

FR/LG gives the qol improvements from the third gen games. So unless you have nostalgia for the original R/B like I do I would just recommend you go with these remakes instead. I prefer the originals but I would imagine if given the choice most people who haven't played either would likely prefer the remakes.

Gen 1 is perfectly playable (otherwise it wouldn't have been so widely liked), but I don't think it can be denied that they made worthwhile improvements to mechanics and interfacing as the series went. Not every change was 100% good, but just simple stuff like dividing up items in your inventory into sections by type, or the run button.
Boxes also just handle so much more conveniently.

In terms of Gen 1 being remade under Gen 3's framework though, I can certainly imagine something that would both be better, and still more faithful to the original game's aesthetics.
Some people accuse FRLG of filing off Gen 1's slightly gritty feel and tone, and I can't actually fully disagree with that.

Say, if you were to remake RBY within Gen 3 yourself, would you keep the graphics monochrome? All black and white, but higher resolution and with a few more shades to work with (let's say 8 in total), along with things like transparency effects, just to retain the look.

Make up for the lack of color with just detail and animation (and actual animation, not just tweening).

Pixel Remasters suck for everything except 3, DS 3D ports are completely different experience that doesn't replace original games, but is worthwhile for what it is.
Dragon Warrior 1 just got way better with every new version (until mobile port, which is shit). And yes, Famicom version is worse than NES version as well.
GBC is way to go for first three games, NDS is way to go for 4-6 (4 with party chat patched in).
