Why were there so many Moai in retro games?

I think part of it is simply because they're interesting and neat.

I know that for Konami, people there thought one of the devs had a face which looked kinda like a Moai, and it became his nickname, and so they kind of ended up putting Moais here and there in their games as tribute to him, which eventually just became a theme and tradition.

That is not true, but it's the closest thing to the real answer ITT. The archeological digs that unearthed them and discovered how big they really were mostly began in the 60s and 70s, and the ongoing discoveries were a highly current topic in magazines like National Geographic in the 80s and 90s.

There was also a trend in Japan in the 70s and 80s involving mock-moai statues with the punning name "Moyai" ("helping each other")

Its a distinct style that looks good in primitive graphics a lot of design decisions were made based on what the screen could parse in those days.
Its why digimon designs are so extra they had to go ham to work any real design variety on a tamagotchi screen
