I haven't played as many games on the system as I'd like, but my answer is probably FF7 or MGS1. I also like Castlevania Chronicles, Crash 1 and 2, RE2, and THPS2.

It's not even my favorite FF, but it's such a comfy adventure with great aesthetics, lovable characters, and brilliant music. Getting to hear that overworld music and see the blue sky the first time you set foot out of Midgar is such a legendary moment.
