NES version because I really like the original music compositions for it. The much earlier Commodore 64 version had straight transcriptions of Bach and Handel as rendered by the C64 - maybe better than you'd think but I'd rather listen to actual instrumentation. The NES versions do a pretty good job of using the NES sound chip for a harpsichord.

First one I played was the Sega Genesis version when it showed up on the Sega Channel, so I'm still partial to that even if the soundchip makes the music sound farty.

2004 was pretty good, too.

I will never forgive Firaxis for not creating a new installment of Pirates! in the 2010s. Nowadays, I no longer trust them to do it justice.

This thread made me nostalgic enough to fire up Pirates! Gold for Genesis and do a career. Unfortunately at around age 30 every country allied with every other country and I couldn't close out the 10 pirate quests by getting a title of nobility (I could probably just wait around until a war started but I was sick of it). 114 Pirate Score finish.
