If you're from the UK, it's possible you might be getting the actual game mixed up with some of early British promo material? The "Sonic the Comic" series that ran in the UK gave Robotnik an origin story where he was a kind scientist named "Dr. Kintobor" before becoming the Robotnik in the games. In that origin, he's depicted with a more traditional white lab coat and as far as I can think of it's the only media around that era that depicts him as such. The Eggman from the original games and Japanese media always wore red as far as the final design goes, and the older Robotnik you're referring to in the movie is based on an entirely different character introduced in games from the early 2000s.
