When did anime start massively influencing western games? I know Half-Life has the Akira elevators, but a game like Oni is anime top-to-bottom.

Never. Western art styles influenced video game designs far more than vice versa. Which is one of the reasons Oni flopped so hard. No one wanted to buy the weird looking anime game.

The only western game with heavy anime influence that has been widely successful critically, commercially, and socially, has been Expedition 33.

South Park was made in the 90s, rick and morty, which is dogshit now, has it's roots in 00s crude flash animation and so does smiling friends. Never watched hazbin hotel which looks like faggotry and is clearly influenced by anime.

Adventure time, steven universe, gravity falls, hilda, etc all have the bean mouth look with anime influences.
Castlevania, blood of zeus, terminator zero, etc all have that homogenized anime look.

Hell, the bad guys 2 has anime influences.
