Beat 'em ups didn't go anywhere, they just became 3D.

The problem beat em ups had is that they let the player bypass interacting with the game mechanics by feeding in credits. Thus leading to complaints about the shallowness of the genre by the sort of people who do that. Shoot em ups never got that reputation, they made sure you knew you were playing the wrong way by wiping your score and eventually withholding the ending entirely if you feed, or just using checkpoints. Even thought you can play most shoot em ups just by feeding in credits until you get through just like a beat em up.

That is absolutely true. Beat em ups should have had checkpoints as a rule, allowing immediate continues only in two player mode.
SNES final fight sensibly makes you start the stage again if you game over, an actual improvement over the arcade version.

Beat em ups have multiple actors on variable planes which act independently of one another, work with or against each other, and with or against the player. Beat em ups also have level designs, enemy placement, pacing, etc. They're more complex than fighting games.

Of course their AI is simple. If it was advanced you'd be fucked. As it is you get challenged because many different enemies, all with their own simple behaviours, all combine together to form tough obstacles that you have to deal with. It's great.

Continues were just a way to milk kids and tourists, if you are the real deal you wouldn't creditfeed like a retard, bmups either delete your score or expose the continues you used, not to mention Capcom games have 1cc endings.
