Pipes=plumber!” No one in Japan ever called him that until fairly recently since Nintendo was forced to acknowledge western headcanon to appease the insects (similar situation as the Zelda “timeline”.) His actual canon job is carpenter, from Donkey Kong.

Mario is a magician
The story in the manual of the Famicom/NES port of City Connection is easily my favorite example of this. In the Japanese version, you play as a young Californian girl named Clarice. She is a speed freak and is causing trouble on the world's highways, prompting the police to chase her. That's the whole story. In the North American version, they changed all the graphics of the girl to a dude, so they had to rewrite the plot in the manual. This is what they came up with.On a somewhat related note, the editor for this game's Japanese Wikipedia article made up a bunch a bullshit about Clarice traveling the world's highways looking for a boyfriend, and the police being after her for underage driving since she's only 15. Zero source for this anywhere. They just made it up. The Wikipedia article was then used as a source for a 2016 book called Nostalgic Famicom Perfect Guide. This book was then retroactively added as a citation for the story segment of the Wikipedia page, creating a circular reference. Then, when the game got a digital rerelease on the PS4, the store page lazily grabbed the story from the Wikipedia article, "canonizing" it within an official release.

ALttP had a number of flourishes added to it's backstory in the manual, including Ganondorf's surname being Dragmire and his full name after transforming being Mandrag Ganon. Doesn't change anything, but it's still NoA making shit up out of whole cloth just to make the villain sound a bit more interesting.
