Is it just me or is this game literally unplayable? I don't know what the fuck they did to the controls, Wave Race 64 controlled perfectly why did they change it? It feels so stiff an unresponsive, I genuinely feel like I have no control over the game most of the time.

I thought it controlled pretty well.
I've jet-skiied hundreds of hours irl and as you go there are moments where you're skipping over the water like a sine wave then your boat sinks down and you gain "grip" so your throttle and steering have more impact when the boat's weight is pushing down so suddenly your steering might "catch" and send you that direction. The game replicates that. Maybe that's what you're dealing with?
