Love the grappling hook, even if it's a bit clunky. I wish Wind Waker had more outdoor environments you could explore and use items like the grappling hook and deku leaf in. I have a feeling the enemy AI wasn't built for open spaces, though.

Can you ever jump from a grappling hook onto a ledge or a climbable wall? or do you have to land on solid ground?

Isn't there only one? I've been playing through it recently and I only recall the first visit to the Forsaken Fortress requiring stealth, and I personally enjoy that section. It's weird from a pacing perspective since you've just received the sword, but I don't think it's bad in itself. The only other time stealth is forced on you is maybe the sequence of sneaking back onto the pirate ship to acquire bombs, which I think only superficially uses stealth.

If anything I wish stealth was a viable option in other parts of the game, or used deliberately elsewhere. The second visit to the Forsaken Fortress is clearly meant to show off the Master Sword, and there's no being tossed in jail as far as I can recall, so stealth doesn't have any advantages. I can imagine that really improving the stealth sequences would require a little more mechanically to make them worthwhile, like it being possible for Link to use enemy weapons more permanently, lose his sword, or use environmental hazards against enemies (e.g., chuck a pot at a bokoblin to knock him over then retrive his weapon, which I think is entirely possible in vanilla but isn't viable in the Forsaken Fortress). But I still think it'd be cool to see it used elsewhere, even with the mechanics as-is.

Interestingly, a lot of that stealth sequence is adapted from part of the anime Future Boy Conan, including the searchlights, jail, rescuing a girl, and seagulls by the lit window. Even being brought to the island by pirates/sailors. Way more than that is used as inspiration in the rest of the game too.
