This game keeps filtering me, I have no clue what the fuck i'm doing half the time and the other half I keep dying or having to re-do needlessly long platforming sections, any tips to git gud since I really want to like this game and I enjoy the combat a lot.

It's a Dave Perry game, not a lot of the level design is coherent and control response doesn't feel optimal due to overanimation of the sprite, same thing with hitbox detection being wonky due to "stylized" tile design instead of more game-y blocky tilesets.
Overall, you olay EWJ for the visual spectacle, the humor and music, not really the gameplay or game design.

The snowman took me a bit of brainstorming to figure out because theres no indictator he's taking damage, then i got a game over at some point after and decided to call it a night for now but i'll use the password to go back tomorrow and get to the proper boss.

After Big Bruty comes Down The Tubes/Tube Race, which is the most infamous level in the game. If you can get past that then you can beat the rest of the game.

More gimmicky, much more wacky (believe it or not), similarly cool to look at, but perhaps annoyingly over-the-top in general. I didn't like it but some people like it. I don't remember having much trouble with it; I imagine it's probably a bit easier than the first game. I got sick of it maybe 2/3 of the way through though and did not bother to finish.

The run and gun stuff is still good and it's overall worth playing if you enjoyed EWJ1.

Perry learned to keep his games more interesting to play by adding variety of gameplay mechanics, more emphasized on ewj2, which to this day is controversial to discuss. Some say ewj1 is better because it has more regular platformer levels and 2 fans say the platforming kind of sucks anyway and everyone just plays for the art direction. In this regard 2 is more experimental and often more fun (lorenzo's soil, villi people), but they went overboard with puppy love a bit, 2 would have been enough. I actually liked it on the snes version, could do perfect games of puppy love and get the continue and stuff. Flying King and the balloon head stages were very frustrating.

Even if you think the platforming is bad, I certainly think it's better than most of the gimmick mechanics, particularly those in part 2. Some were fine, like Lorenzen's Soil, since they were still fundamentally rooted in the run & gun/platforming aspect. Puppy Love was abysmal imo, and inflated head was kinda boring, same with Flyin' King (which I assume is meant to be a reference to Lion King). I think the biggest problem was really the last stage, which was way too easy and didn't even have a boss fight at the end. While the original was subversive in terms of tone and character design, the sequel seemed to be like "what if we expanded that subversion to the gameplay itself," to mixed, but overall poor, results.
