Why was it so god damn good and soulful?

The Crash Bandicoot games are pure gameplay. Crash 1 and 2 belong to the very few games I will replay for the rest of my life.

They indeed are a treat.

It's everything Bubsy wanted to be...

Because they made simple, intuitive controls and a camera that just works to allow them to focus on what actually matters like level design and flow, enemy design, soundtrack, artstyle, challenge, replayability, secrets and collectibles. The game oozes charm and has a ton of attitude, it's the perfect encapsulation of the 90s.

You want to 100% Crash because it's satisfying breaking down the levels and destroying every box, whereas Mario 64 boots you out of every level after completing one objective and makes you painstakingly retread the boring ass level a half dozen times.

At least the 1st also feels like a great adventure. In N.Sanity beach you can see Cortex' blimp far in the distance and in some other levels you can see it get closer and closer until you reach it in the final level. And when you are on the blimp for the final boss fight you can actually see all the islands that you explored. It's small details like this that make it so awesome. It's a neat little epic journey you can beat it in 3-4 hours.

It felt like a classic 2D platformer, a solved genre by that point, simply translated in 3D, so it felt polished and cohesive from the get go, even in a 1st installment so early on the 3D era. It's my favorite 3D platformer of all time even now, though I'll admit I'm definitely biased on that one. Here's some Crash Bandicoot art I made, based on his "Landed" redesign.

A cancelled reboot from the 2010's before the remasters came out, I love his design there, though I don't think I managed to replicate it well, here's the concept art.

Boss fights stink. Especially in the 2nd game. What even is that stupid asteroid shit in the tube 'final boss fight'

Only played 3, not the first two so can't comment.

This is definitely the weakest aspect of the first two games. Even Rare got their shit together after DKC1.
