One I played recently is Doraemon: Nobita no Dorabian Nights for the PC-Engine.
Is a pretty decent platformer loosely based on the movie of the same name. It only has 17 stages (divided across 4 worlds) and you don't need to know Japanese to play.
There's both a HuCard and a CD-ROM version of the game, but the only real difference is that the latter has voice acting.

You could also try the SNES games (I haven't played them in many years, only thing I remember is that they're all platformers). The first SNES Doraemon game also got an English fan translation not too long ago.

I played through the first 3 SNES games a few years ago, found them to be pretty accesible despite not knowing japanese.

First one was my favorite, nice pleasant platformer with an ever expanding hubworld ala Super Mario 64. Has a recently released fan-translation like the other anon said.

Second one is based of the first, but it didn't feel as well polished, with a mostly empty overworld and annoying enemy respawns, though it still has some highlights.

Third game was made by a different company and now it plays closer to a metroidvania with no overarching overworld, bigger focus on exploration and each character having unique abilities. Pretty nice overall.

Fourth one I checked out briefly, but it seemed enjoyable from what I tried and also has a fan-translation.
