The re-releases of REmake fuck with the color grading (and do a bunch of other shit, actually), so it really doesn't have the same look as it was intended to have when it was made.The original Resident Evil is definitely more colorful either way, but I don't think it's honest or fair to compare original Resident Evil to ONLY the later re-releases of REmake, especially when the subject is on colors.Rather, there should be two columns for REmake, one for the original release, and one for the re-releases. Maybe also Deadly Silence, I never played that one, but it did a lot of things with the graphics I think.Also, just for fun, I took OP's image here and decreased saturation by 70% on the original side, and increased it by 70% on the REmake side. It looks weirdly blurry and artifacted.
So REmake looks like proper horror game and not rainbow road from Mario Kart? Well not surprised it replaced the original entirely.
