Most people don't "grind" in an RPG because it's needed to beat it. They grind because they're enjoying it so much they want to get that Level 99 and extend the amount of time they're playing the game.
I'm kinda surprised you didn't know that.

Yes, most RPGs don't actually require grinding at all. Often people grind because it's a soothing, meditative activity. You can grind while listening to music or watching a video.

I grind to make boss fights easier, because I play RPGs to relax not to stress like a Japanese salaryman. RPGs that scale enemy levels to maintain some arbitrary challenge are universally dog shit.

A lot of games also have you "grind" by getting lost exploring dungeons.

Grinding is a lot more fun when you can see the enemies before battles like in Chrono Trigger. Random battles that just pop up with some swirl effect trigger the same kind of effect a phone alarm does. You're busy doing something and it practically jump scares you, and then you have to stop what you're doing and deal with it. But when you can see the enemies on the screen it puts you in the active role of chasing them down to initiate the battle, which is more gamey, but it also gives you a dopamine boost when you catch them and it's just a more positive experience overall.
