Ok, i had a look at all changes and let me do a quick rundown ( NTSC-U -> PAL/NTSC-J)

-Weapons-
Ammo
>Ammo caps introduced (50Ha, 25Sh, 15Ma, 150TMP, 10Mi)
>Previosly the game capped your ammo according to a bulletpoint system, which factored all ammo types in your inventory
>Static ammo drops reduced

Knife
>Damage increased by 100%
>Damage on Krauser -> 87.5%)

TMP
>Damage increased by 40%
>Cost reduced from 13200 to 8800
>Damage on el gigante and krauser: 80%

Shotguns
>Cheaper to upgrade
>Striker upgrades sooner (4-1)
>Striker upgrades are now more expensive

Red9 and Blacktail
>Buffs across the board

Handgun
>Special crit chance: 50% -> 33%

Rifles
>Bolt-action exclusive damage (18.0 -> 30.0)
>Semi auto firing speed: (0.4 -> 0.8)

Matilda
>Firerate and reload speed increased
>Good luck using this with handgun caps now (KWAB)

Magnums
>U3 takes 50% less damage
>Killer7 upgrades now more expensive

Grenades
>Flash grenades now instantly kill exposed plagas
>Incendiary grenades hitbox increased against Mendez phase 2


General/Uncategorized
>You can skip the mine section by blowing up the bolder with a RPG
>Ashley can no longer suplex enemies after stunning them with a door (LOL)
>You can no longer exit and re-enter the dual gigantes lava pool to pickup the respawning gold bars from its "corpse"
>Regenerators take 33% less damage to everything but knife
>First aid can be only bought if you don't have any healing items, also cost reduced to 5000
>Treasure maps cheaper

This one is important for speedrunning or just efficiency in general. In the NTSC GCN original you can't hit him in his second phase with an incendiary when he's suspended from the ceiling. The hitbox change makes hitting him with his weakness much easier.

I think the biggest change that I can't yet prove is that enemies are more aggro on lower game ranks in the NTSC-U version. On Professional I'm not sure if there's a difference.

I think these spam threads are genuinely marketers. Last year around autumn there was daily Halo 1 threads on here and /v/ then they stopped as soon as the halo 1 remake got announced.

Are the enemies really different on NTSC-U? And is the mercenaries any harder?

I don't know, I just did a few back to back opening level runs in Dolphin and RE4HD and it feels like villagers are noticeably more aggro in GameCube normal mode. If that's true, mercenaries would be harder, too. I'm going to do an RA cheevos run soon for a more thorough comparison.

Can you confirm any changes in the Wii Edition? When did they give Ada a knife?

The HD version that you can get on all the current platforms is a good way to play RE4, but I wish they fixed some of the issues caused when playing in 60fps.
Off the top of my head:
-Button mashing is tied to framerate, so some QTEs hurt my hand lol
-Some physics like falling items are twice as fast
-I swear Leon's hands are more jittery when aiming with the laser sight
