Why don't I like Quake? I've replayed Doom, and all the build engine games but every time I try to get into Quake I get bored a couple of levels in, technically I should like the setting and atmosphere it has going for it, but something about it is just too sterile and soulless

I always say that I like Quake, but I never actually finished it. Don't know what it is, I really like the moment to moment gameplay, the 3D level design and gothic atmosphere are cool, but I always lose motivation at some point, and similar to you OP, I have beaten all the official ID DOOM WADS countless times, including Final Doom which I love. Quake is just really slow-paced.

Yeah, I know speedrunners can blast through it, they make it look fantastic, and it's cool that it invented grenade and rocket jumping. Quake speedruns look way cooler and more acrobatic than Doom runs, but the learning curve with the level design and general movement is steep.

I only ever played the shareware deno for quake and thrn went back to playing duke 3d and darknforces.
Quake to me back then was a texhdemo without a good game attached, and I havent toiched it again in the 30 years since. It just wasnt good as a game, or at least its shareware distro wasnt good enough to make me pay to unlock it.

No grand conspiracies or revisionist history at work, quake simply didnt get good until the 3rd game.

No, the game got famous because rocket spamming deathmatch was fun. Doom's multiplayer had its fans, but circle strafing 1v1 with shotguns wasn't a patch on 16 player free for alls with 3D environments and rockets. Also it was effectively the first action game that "solved" internet latency problems. This was back when 150ms of lag was considered "good", and predictive movement and rollback hadn't been invented yet. But people wanted to play online so much they put up with the lag and the crash prone TCP/IP hack. When QuakeWorld came out with its new netcode, nothing else could compete.

It's not even an inherently bad thing in my book, but taking down the average enemy in Quake takes longer than it does in Doom, and that's pretty much a fact, not an opinion. I'm not even sure why you're being defensive; I'm not dunking on Quake, it's a classic. I'm just saying there's a learning curve to master the movement in Quake, which is not a slight on either the game or its playerbase, quite the contrary. There's also a lot less enemies per map compared to what people got used to with Doom, especially these days for someone getting through Final Doom before trying Quake. I would not say it's slower paced, though, even if the enemies are beefier.

Those are so situational though. I was talking about your arsenal that you always have on you. At that point, you might as well include crushers and telefragging, so Doom is still faster, since there's that one level in Master Levels where you kill like 30 cyberdemons with a crusher.

but the early game seems to have that gratuitous and spammy feel that I'm leery of in higher difficulty modes.. like in level 2 where the end game climax is the intro of the fiend and they hit you over the head with two spawns, the second one being two at the same time. or in the third level necropolis the game randomly spawns two shamblers in a row in a random mid level ambush, besides immediately throwing two fiends at you again right at the start.
I dislike when games have flat 100% all the time pacing.

It would have to shoot slower. There's mods that do this - Drake, Reliquary - and it feels fine. They'd go back to slower, chunkier shotguns with Quake 2 anyways, and they would also round out the enemy roster.

I don't think there's any intended way to play, but yeah, hard in Quake is equivalent in difficulty to Doom's UV. I don't think it's anything too crazy outside of episode 4 and it's fine for a first time playthrough, but you should go for whatever difficulty you want.

This is no longer a thing in the modern remaster, but the OG default controls were:
>arrow keys for movement (tank controls)
>page up/down for moving the camera up/down, end centers the camera
>hold alt to strafe
>ctrl is shoot, space is jump
Mouse wasn't even in the settings, you had to type +mlook in the console to get it working

Oh, you mean mouse look up and down. I've been talking about using mouse with default scheme, for turning left and right. The game has aggressive vertical auto aim when you look straight anyway.

Default control scheme in Quake are not that bad really: mouse for turning left and right, bracket keys for strafing, space for jumping, right mouse button to walk forward, middle mouse button when pressed acted as +mlook. Only walking backward is not comfortable.
