Yes, everyone should know how to beat the game using the intended play mechanics for high level players. That involves having a standing defense against enemy attacks, moving your shield up and down as you crouch. In the meantime, when the moment is right, you strike with your sword when you get a chance.

The combat in Zelda 2 is actually quite exceptional if you play like this. It's somewhat rhythm-based, as you should be in defensive mode most of the time, but then break defense to attack moments after the enemy does (while the enemy attacks are random, they will not typcially occur within .5s after a prior attack, so you have a small window of safety to break defense). This means you must time your attacks. It's quite deep, and reflects the 14th Century Italian tradition of "measure and tempo" in sword fighting.

Most players will button mash and jump around though, and will experience total failure. If you mash, you will just get hit by the next enemy attack and if you use jumping attack exploits you didn't beat the game (or at least you beat it on easy mode). It's about timing.

even assuming that the interview is real, he's referring to the downward thrust, not to the fact that you can attack while jumping, which are two different things. Attacking while jumping is an extension of reading the opponent and attacking high when his shield is low. Also, the in the late game there are combats that take place in corridors with low ceilings precisely to avoid doing that, which is an acknowledgement of the mechanic (rather than it being something 'unintended' like OP claims, as if the devs didn't realize you could attack when jumping) and purposely forcing combat without jumps to up the difficulty in the late game.
