Which versions of BG1 and 2 should I play? I have both on GOG and EE on steam too.

Alright anon, here’s the straight dope:

If you’re a purist who wants the TRUE 1998 scuffed experience, grab the GoG original. You’ll get the crunchy old UI, tiny resolution, jank pathfinding, and all the original bugs that BioWare’s QA department definitely didn’t fix. It’s like drinking warm beer in a smoky tavern — authentic, but it smells a little weird. Modding’s a hassle but you can roll your own BG1Tutu/BGT setup and feel smug about being a real grognard.

Enhanced Edition (EE) is basically BG1 with modern QoL steroids:
• Higher resolutions without needing to sacrifice a goat to the config gods
• UI that doesn’t make you squint like a mole in daylight
• New companions (some are cringe, but whatever)
• Integrated mod support without having to browse Geocities-era forums
• Still 99% faithful to the OG, minus some purist nitpicks

TL;DR:
• Want museum piece authenticity? Original GoG + mods = peak autism build.
• Want to actually finish the game before you die of old age? Enhanced Edition.

Either way, roll a half-orc barbarian and dump INT. It’s the only moral choice.

Play ee land remove or ignore the beamdog content and use the mod thst restores the old sprites. Other than that try some story or content mods, there's a fantastic modding community. There's even iwd and nwn for bg, meaning you can have a 350 hour adventure.

I feel like I'm missing something fundamental to the mindset needed to play this game, and I can't find this out for now.

Are there any sidequests that are meant to be done more than a few chapters after the one you got it in? As in, it's very clear that you're outmatched, and need to gain quite a few more levels, some better gear, and maybe even more powerful teammates to beat it.

Or is it that any sidequest can be beaten at some point before the end of the chapter? Maybe you need a bit more power than you started with, and have to do some easy ones first. I'm sure that being smart and using good strategy will make almost any encounter possible. But when my guy gets one-tapped, I need to know if I'm just in the wrong area, or following the wrong quest.

Also, How do you usually decide who to keep in your party? I don't want to let the ones I've already started with go, and I'm too addicted to the quickload button to willingly let any of them die, especially when it means that later encounters in this outing will be far harder with less bodies to deal damage.

You talking about 1 or 2?

1 is more freeform and open, the chapters don’t matter much, there’s basically three phases of the game: early on you don’t have access to the Cloakwood and Baldurs Gate, but the rest of the world map is open, and much of it is optional. Go exploring the woods for loot and XP. Most areas are self contained with few side quests, most side quests are in towns.
Second phase is when Baldurs Gate opens up. And the third phase is the endgame, after your return to Candlekeep. The only time sensitive quests I can think of are that many quests in Baldurs Gate will be unavailable in the endgame due to plot reasons.
BG1 is a lot more open and less railroaded than BG2, it’s like a comfy low level adventuring party tromping through the woods. The only impetus early on to not explore is the iron crisis (plain, unenchanted weapons and armor have a chance to break, until you explore the Nashkel Mines)
There are dozens of party members in bg1 and they’re designed to be replaceable for when you get them killed off. Pick a class composition you like compatible alignments to your roleplaying, and personalities you like. Personally for bg1 I’d want to have three martials, a cleric, a thief, and a mage.
