Elder Scrolls has always done them very poorly. You should be able to physically look like an extreme vampire, or maintain looking like a human. You should be able to travel by day by wearing clothing and a mask. This is basically it. That alone would make it fun. And then of course, have NPC's react to you drinking someones blood. And of course, allow you to bite people, or at minimum drink a dead persons blood. Idk why they make it so complex.
