Final Fantasy I: Pixel Remaster or PlayStation
Final Fantasy II: Pixel Remaster. The PlayStation version requires you to beat it to unlock Hard difficulty (the original normal difficulty).
Final Fantasy III: All three versions of the game are difficult and different, Pixel Remaster is the easiest and has modifiers.
Final Fantasy IV: 3D Remake on DS is hard by default, the mobile and PC versions introduced a separate easy difficulty and dubbed it normal. Pixel Remaster has modifiers like the others and speed ups.
Final Fantasy V: Pixel Remaster. All Pixel Remasters have speed ups and modifiers, like removing encounters or how much experience you can get. I've seen someone on X beat the game using Freelancers without leveling up.
Final Fantasy VI: Pixel Remaster, see above.
The modifiers for VII, VIII, IX, and X make the games easier, not harder. Those are the only ones I know about.

Kek, OP asked for versions that have a hard mode and allow you to speed up combat. The Pixel Remasters are not really hard, but you can use modifiers to not get experience and money, which means no leveling up. I have to check if there are AP modifiers. I haven't played them, but when I play VI, I plan to do a no experience run until I recruit Gogo and Umaro.

It's not possible to make RPGs "challenging" even in theory. They're games with stats that decide what's possible. If you're too low level, you can't do the thing. If you're high enough level, you can. It's as simple as that. There isn't anything about challenge involved. They're RPGs. They're about stories and adventure. They're not about masochistic masturbation.

It's called an exp curve, retard. You set a soft cap for each area. If you're below the level of the enemies in the area, you gain a lot of exp until you're at their level, at which point you gain so little that leveling up takes hours of grind. You include secondary progression mechanics that provide tactical options, such as learning new skills that are gained in other ways than standard experience points.

I agree, I sure loved the story in Wizardry. Such epicness with plot twists at every turn and the game did a good job at giving personalities to the characters. Meanwhile the gameplay wasn't remotely challenging, just spam X to win basically.

There's a lot of gameplay overhaul mods. The most popular is New Threat. VIII also has a bunch. Ragnarok Rebalance Mod, Crystal and so on.
