I think a lot of them have traps in them that trick you into thinking you need to farm the shit out of them (or otherwise play in a tedious way) when in reality it's pointless after like 5 minutes in the combined chapter, and that can take some wind out of your sails

You play as several people, you cant really determine who's the "real" MC.
However, truly spoilers for the game:
You choose the final character to play as for the final chapter. You get few bonus scenes at the end depending on who you chose, so technically you can just choose whoever you want to be "you" since you can just pick them for the final sections.
But I really recommend just going with either custom names for everyone or default names, this is the kind of game where that adds up to the experience.

Pretty good. Even people who love the original like me, will fully admit it was filled to the brim with flaws because it was a B-project by the team in-between working on Chrono Trigger. The remake is basically the same game but isn't using FF4 graphics anymore and is a little less frustrating for reasons I listed below.

It's "easier" in that it will actually tell you shit like what element an enemy is weak to, how much damage moves actually do, etc instead of hiding all that information. That is actually way more important than the QOL stuff that was added.
Regardless, some fights are still complete bullshit where even if you know exactly what to do, there's RNG involved to win like the King Mammoth.

He's kind of interesting to me. All the others feel like they're overcoming some warped human desire, but he never really does when you consider his ending bit. The only difference from him and his villain is he didn't kill the guys afterwards.
I still like basically every other one other than the psychic and the ninja more though. To be fair though, in the ninja's defense he sort of has to be a blank slate given the chapter's kill count gimmick. He could either be a psycho killing everything in his path or an extreme pacifist.

Alkaiser was my favorite. I played that game so much. Remaster too. That new uber boss is insane. I don't think I quite beat it, I got tired of grinding but I was right there. Not really. Characters are basically prototype ideas for games that weren't fleshed out enough for proper release. By that strict logic anything could be a sequel if you stick to that setup. If we try and use the idea of short stories taking place in different times... Well, most of these aren't times but moreso general theming.

Someone can probably think of better ideas on that front than me. As for how to tie them all together, it'd be tempting to do Odio again given the game ends with the warning Odio can always appear. But it'd end up being pretty predictable. Could maybe have each chapter focus on one of the 7 Deadly Sins, but that can also be rather played out as a theme.

All in all Live-a-Live works so well because it feels so one-of-a-kind and it'd be hard to recapture that feel with the knowing expectation that comes with sequels.

Prehistoric: Pretty good. I just wish they either let you have Zaki earlier or let you fight the King Mammoth with Beru
China: I think it needed like a middle segment where the Sifu sends out all the students on their own little individual playable sections so you get to know them a little better before you choose one. Also Odi Wan Lee and the Indomitable Fist could have had more of a presence earlier in th story instead of coming out of nowhere to be the villains for the climax
Edo Japan: Just needed more ways to get from one part of the maap to another so it's not so easy to lose track of were you're going I think
Wild West: I think this really needed a middle segment. Like Sundown and Mad Dog track the outlaw guy from the beginning back to his gang's hideout, like abandoned mine or something as a traditional dungon for the segment, then you learn they're attacking the town at sunrise and so you go back and prepare for it
Present day: I dunno, it's a cool setting and I wanted more of it but I get that it's basically street fighter in RPG form. One cool idea I read on reddit is that one of your opponents should have been an Earthen Heart student so you get a better sense of the interconnection of the timeline and the sifu's legacy lives on into the present
Near Future: Could have used a darker aesthetic I think. Like cyberpunk biker gangs kidnapping orphans so they can be liquefied to resurrect a god is kinda dark but it never really feels that way

Far future: Weakest chapter IMO, you just go around watching scenes play out on their own for the most part. I get that the point was to be the chapter without any combat, but boy it would have been kinda cool to have like an Aliens thing going on with a whole bunch of lose aliens on the ship as enemies with Darthe and Kato as your party members. Cube could have still been a pure support character with no weapons until the fight with OD-10.

Considering how much of a heavy hand Tokita had in remaking his game, I have to assume that at least on some level he approved of it. I mean he went as far as having Kageyama sing the Buriki Daioh theme in both languages instead of telling us to just hear it in Japanese even though Kageyama really can't sing in english well.
