I have never played this series before. I have been done my research and I'm interested on playing: Marie, Rorona, Totori and Ayesha.

I decided staring first with Rorona, however I can't decide whether I should play OG Rorona or Plus.
I heard Plus is more of a Remake rather than a "Director's Cut". I usually look down on remakes so I'm indecisive for this case. I don't mind the ugly graphics of the original game and I'm concerned if the new gameplay additions might casualize game or if the improvements will make Totori less enjoyable, as it will make it outdated by comparison.

Is there a real reason to stick with OG Rorona over Plus?

I haven't played the original Rorona. I've heard it's slightly more difficult than Plus, though, and has a few unique alchemy mechanics rather than just borrowing from Meruru. Rorona Plus also has some quality of life improvements over Totori, and some post-game content that's intended to be played after Totori and Meruru plot-wise.

Regardless of what you go with, I recommend also playing Meruru if you end up enjoying Rorona and/or Totori. I also advise avoiding guides and letting your playthrough be your own, even if that means you'll screw some things up.

Baseline rorona is not a hard game, but it can be a bit tedious. If plus has introduced merurus QoL then it’s probably a significant improvement but I guess it might sour you on meruru ahead of time (meruru is a great game with a really well designed gameplay loop). That being said, if you are at all engaged by the crafting and explore its options you should easily discover what you need to beat the game. With or without these qol.
The timer is a meme, once I got in the groove I had weeks to sleep off at the end of every deadline.
Anon is right though, NG+ is there for you and it gives you significant advantages that let you get all the achievements.
Do your first run without a guide.
